The mucilage found in Okra (lady’s finger) has binding properties due to the presence of the hydroxyl group of sugar. When it is mixed with the sugarcane juice and boiled, it binds with the pigments of the juice and coagulates to form a sum on the surface. Here the lady finger’s stem is used for clarification of the sugarcane juice too.

  1. Harvesting sugarcane + preparing for juice extraction.
  1. Juice exertion + Boiling and adding soda/ Okra crushed juice.
  1. clean all the dirt and impurities + Cooling, rubbing jaggery liquid till it becomes dry.
  1. Crushing the dry jaggery for making it in powder form.
  1. Packing and storage.

Both jaggery and sugar are produced from sugarcane juice. But both have lots of differences in their nutritional values. White sugar is the product of meticulous industrial processes, like the treatment with charcoal. Because of going through so many treatments, sugar loses close to all of its nutritional values. Hence, white sugar is called a highly refined form of sugarcane syrup. 

Jaggery on the other hand is the unrefined form of sugarcane syrup. Jaggery doesn’t go through intense processing. Sugarcane syrup is only boiled until it’s thick enough to dry. This ensures that the nutritions like mineral salts, iron, and fibers are not harmed. 

JAGGERY IN AYURVEDA 

For ages now, Ayurveda is using jaggery as a constituent for many medicinal purposes. 

According to Ayurveda, jaggery can be used to cure or treat breathing problems, cough, asthma, etc. as it is known to produce warmth in the lungs and also clears up the respiratory tract.

Jaggery can also be used as an anti-aging supplement because it’s packed with antioxidants that fight free radicals. 

Ayurveda also says jaggery can also be used to treat and prevent constipation. As it has effective laxative properties and activates digestive enzymes.

  • Consuming too much jaggery may lead to weight gain as it contains 383g of calories in 100g of serving. 
  • Jaggery is usually made in the rural industry in little to no hygienic conditions so sometimes it gets filled with microbes that can affect your health. This is why it is necessary to make sure to buy jaggery from an authentic brand or store. 
  • Jaggery is said to provide warmth after consumption. That’s why it is recommended to avoid the over-the-top consumption of jaggery in summers as it can cause nose bleeding.
