Remember that the water/nut milk quantity should be twice that of oats. So if you are taking 1/2 cup of oats, make sure to take 1 cup of water or your favourite nut milk.

Now get a pot and fill it with water or nut milk, bringing it to a boil. Once that is accomplished, on low heat, cook the oats until they turn nice and soft.

OATMEAL RAISIN COOKIES

Oatmeal Raisin Cookies

Things you will need:

  • Measuring spoons
  • Cookie scoop
  • Mixing bowl
  • Measuring cups
  • Baking sheet

Ingredients:

  • Oats
  • Raisins
  • Water
  • Flour
  • Baking Soda
  • Cinnamon
  • Salt
  • Vegan butter
  • Sugar
  • Vanilla

Steps:

  1. Preheat your oven to 350˚F.
  • To make flax egg, in a small bowl, stir ground flax and water together. Set it aside.
  • Mix the flour, baking soda, cinnamon, and salt in another bowl.
  • In a larger bowl, add the vegan butter and sugar, beating them until fluffy. 
  • Add the previously made flax egg and vanilla, mixing the solution until properly blended.
  • Now, mix the dry and wet mixtures by adding the dry mixture slowly to the wet one.
  • Once the mixtures are properly mixed, add in the oats and the raisins.
  • With the help of the cookie scoop, scoop the dough onto the baking sheet.
  • Bake the cookies for about 10-12 minutes, until they turn soft.
  • Once the cookies are evenly baked, take them out and allow them to cool before eating them.
  • Your mouth-watering cookies are ready to dig into!

DOUBLE CHOCOLATE OATMEAL COOKIES

Double Chocolate Oatmeal Cookies

Ingredients:

  • 1 cup rolled or instant oats
  • 1 cup all-purpose flour
  • ¼ cup cocoa
  • ½ tsp baking soda
  • ¼ tsp salt
  • vegan chocolate chips ½ cup
  • granulated sugar ½ cup
  • ½ cup white or brown sugar
  • ¼ cup coconut oil, room temperature
  • 1 tbsp ground flax
  • 3 tbsp warm water)
  • 2 tbsp dairy-free milk
  • 1 tsp vanilla extract

Instructions:

  • Mix 1 tbsp ground flax and 3 tbs warm water to make the flax egg.
  • In a bowl, add oats, flour, cocoa, baking soda, and salt, mixing them. This will be our dry ingredient mixture.
  • Take a large bowl and mix the granulated and white/brown sugars.
  • Add the coconut oil to the sugar mix and beat the mixture with the help of an electric mixer. Make sure there are no chunks left.
  • Now add the flax egg, milk, and vanilla extract to the sugar mixture and mix.
  • Add the dry ingredient mixture that we set aside to the wet one, stirring until perfectly blended.
  • Add in the chocolate chips.
  • Refrigerate the dough for about 30 minutes.
  • Preheat the oven to 350 °F.
  • Scoop the dough onto a baking sheet and bake for 10-14 minutes.
  • Once baked, set them aside for cooling.
  • Dig in!
