Foxtail millet cookies

Ingredients

  1. 50 grams of Foxtail flour
  2. Fifty grams of whole wheat flour
  3. Fifty grams of softened butter
  4. 2 teaspoon White semi seed
  5. 50 grams powdered sugar

Steps

  1. Take a bowl and softened butter and powder sugar.
  2. Mix well until fluffy and creamy with a wish or spoon.
  3. Add Foxtail flour and add whole wheat flour.
  4. Mix well to make a soft dough.
  5. Roll the dough and cut the shape with a cookie cutter.
  6. Take a greasing baking pan. Arrange the cookies.
  7. Sprinkle some white semi-seed.
  8. Set 180-degree celsius in a Pre-heated microwave oven, Bake for 12-15 minutes.
  9. After baking, transfer the wire rack.
  10. Allow it Cool for 10 minutes. Then transfer the Airtight container and enjoy your Tea time.

Foxtail and coconut cookies

This recipe is made with an equal quantity of millet and wheat flour and jaggery, coconut, and butter. When it comes to sweet, foxtail millet (Thinai) is out of all millet varieties because of the unique taste thinai gives when mixed with jaggery and coconut. Here’s the first recipe

Ingredients

  • Powdered Jaggery / Gudh – 3/4 cup (75 grams)
  • Cardamom – 1 no
  • Butter (room temperature) – 50 grams
  • Foxtail Millet Flour – 1/2 cup (50 grams)
  • Wheat Flour – 1/2 cup (50 grams)
  • Baking Powder – 1/2 tsp (optional)
  • Pink Salt – a pinch
  • Coconut(desiccated) – 1/2 cup approx (40 grams)
  • Milk or Coconut milk to bind the flour
  • Coconut(desiccated) – 2 tbsp for dipping

Here is a step-by-step procedure of the recipe.

  • Wash and soak foxtail millet for 60 minutes/1 hour.
  • Remove the water and dry in the shade for 20 minutes
  • Grind to a fine powder when the grains still have some moisture left. Grind jaggery and cardamom to a fine powder. Roast the flour till a pleasant aroma arises.
  • Beat butter in a big bowl until it turns fluffy. Add jaggery powder. Beat again together until they turn soft, and a light mixture is formed. Add millet flour, wheat flour, baking powder, and salt to a sieve. Stir everything together.
  • Mix gently with the butter mixture. Add desiccated coconut and mix again
  • Add milk or coconut milk to form a firm dough. Take a small portion of dough and make shapes
  • Dip in desiccated coconut and keep on the baking tray or any plate to bake. Heat a thick bottom Kadai/pan, and layer with sand or salt. You can also use a pressure cooker without a gasket and weight.
  • Place a stand and baking tray once the Kadai heats up. Bake in medium to low heat for 20 minutes for soft cookies and 25 minutes for crispy brown cookies. Cookies are done when spongy at the center and crispy at the sides
  • Let it cool completely before serving

Don’t Forget to Keep a check on the biscuits from the 8th minute. Bake at 170°C for 15 to 20 minutes if using the oven. These can be stored for 4 to 5 days in an airtight container. You can also prefer to freeze the dough for 30 minutes and cut it into the desired shape. Freezing dough enhances flavor and helps to make proper shapes.

  • Preheat oven to 170 C.
  • Take a  bowl, add butter and mix well till it becomes creamy. Then add powdered jaggery and mix well till everything is combined well.
  • Now, add foxtail millet flour, wheat flour, elachi powder, almond powder, and salt and mix well to form a soft dough.
  • Make small lemon-sized balls out of the cookie dough, flatten them little and place them on the cookie tray.
  • Now, bake the cookies for 15-20 minutes. Then allow it to cool completely on a cooling rack and then serve.
